Colorful Curry Winter Slow Cooker Soup

Need something quick, delicious, seasonal, and nutritious, oh, and easy?  This soup is perfect for cold nights in or for company.  It’s various colors add different antioxidants to the dish which boost immunity.  The beans give it protein and satiates hunger.  The layered flavors are savory with just a touch of heat and salt.  One pot, quick prep, and the meal serves 4-6.

4 small potatoes

1 yellow/orange beet

1/4 of a purple cabbage

3/4 cup of baby lima beans (or other bean)

2 Tb curry powder of choice

2 ts of garlic powder

5 cups of broth (Preferably from the root cellar.  I used red chile/corn.)

Chop vegetables and layer everything into crock pot and set to low for 8 hours.  After 6 hours I add 1 Tb of salt because I don’t put any in my broth.  Adjust accordingly to what your soup needs.  It may not need any extra.

Serve with delicious, warm sourdough bread (tomorrow’s recipe)!

Canning Soup for Instant Winter Lunches

I am terrible when it comes to lunch inspiration.  I despise sandwiches, don’t like wraps, not really into salads as main courses, don’t want processed foods, and have little time to make anything the night before or morning of.  My husband leaves at six in the morning and needs a packed lunch.  Sometimes I just have to feed myself, sometimes I feed three or four girls when I work at my shop.  I need lunch solutions!

Enter the beautiful pot of soup.

I generally make at least one soup a week for a meal.  It doesn’t take much energy to make it a bigger batch.  I serve a delicious soup with homemade bread and vegetables from the garden for dinner then the next morning I can the rest of the soup in wide mouth pint jars.  Instant lunches through the winter.  Choose a soup, take it to work!  I always have bread made and with a side of fruit or canned applesauce, maybe some crackers, or carrots and dip, this is a great lunch.

So long as the soup doesn’t have dairy or rice in it, this will work.  Pour soup into large mouth pint jars leaving an inch head space.  Make sure rim is clean and replace lid.  Put three inches of water into pressure canner.  Put jars in.  Secure lid and turn on heat on high.  Listen for lovely ticking sound from the shaker, turn down heat a little, and pressure can (10 lbs of pressure for most folks, all the weights all the time for us high altitudes) for 1 hour.  Anything with seafood goes 1 hour and 40 minutes.  Let steam release naturally.  Then remove from pot and let cool on towel on counter.  When the jars are cool and the you know the seals are set, label, date, and add to root cellar shelves.

Spring Produce and Lemony Spring Soup

It is easy to find dinner inspiration when it is not the dead of winter!  The garnet orbs caught my eye as I was watering.  One might have thought I had found gold the way I danced over and started pulling those beautiful earthy radishes from their bed.  The first crop.  Lettuce, lamb’s quarters, lemon verbena, lemon balm, and lemon thyme joined the pile of growing dinner plans.  And a leek!  Left over from the gardener the year before, I am thankful.  I have never been successful at growing leeks!  Home it went.

Lemony Spring Soup

First gather all inspirations.  I had small potatoes, red and yellow, from the market, a Jerusalem artichoke, radishes, herbs, greens (wild and cultivated).  Use what you have!

First we start with a sofrito.  In Italy this is onion, garlic, carrot, celery.

I chopped 1 leek, 3 cloves of garlic, 1/2 carrot, 1 celery stalk and sautéed in beautiful olive oil until the leeks and garlic were savory and transparent.  I chopped 2 potatoes, 1 diced Jerusalem artichoke, the radishes and added them to the pot.

I used a few leaves of lemon balm, a few of lemon verbena, lemon thyme.  I saved cilantro for the end because I am the only one who adores it.

Chop up greens and herbs and add to pot with 2 cups of vegetable broth.

To the broth I added 3 Tablespoons of Vietnamese Lemon Curry but you could add Italian seasoning, or Mexican seasoning, or Spanish, or your favorite curry or nothing at all!

Add 2 slices of lemon and 2 one inch pieces of ginger, and a real good splash of white wine to the broth and let simmer until everything is tender.

Check your flavor and add salt and pepper if needed.

I add cilantro to my bowl first so Doug doesn’t have to have any.  Remove lemon and ginger pieces.  Pour yourself a big refreshing bowl.  Delicious!
