So You Want to Be a Homesteader (27 ways, a new series)

I read a blog post that talked about homesteading.  In it the author states that people in the city can say they are gardeners, can say they are homemakers, but cannot say that they are homesteaders.  I beg to differ.  I have homesteaded in the country, a small town, and in the city.  Our plan is to get back on land, but that does not change our lifestyle.  In fact, I believe we are actually more sustainable in the city.  We are just missing a well and a couple of goats.

The word homesteading isn’t really a relevant word anymore because the government is not giving us parcels of land to try to live on for five years before we get to keep it.  So, we need to go by the new definition of homesteading and leave it open to everyone.  You can homestead anywhere.  Homesteading starts and ends with high self sufficiency, appreciation for the natural world, sustainability, community, health, and pride in hard work that we do ourselves.

Homesteading can be done on any level, but as you grow your own food, chop your own wood, eat from your own root cellar, create your own medicines, it does get addictive.  This is a great lifestyle and one that anyone can incorporate into their lives.  The more aspects of it that you pick up, the more money you save, the healthier physiologically and psychologically you become, and things that are really important come to the forefront of life.  Family, food, security, counting blessings, and the good life.

The Frantic Mom’s Guide to Dinner

Too bad supper doesn’t roll around when we have excess energy instead of at the end of the day!  “Should we just go out?” one ponders.  But if $40 is to go towards gas and not a so-so restaurant than mama has to get in the kitchen and figure it out.  Pour a glass of wine, Mama, I will walk you through an easy dinner using just what you have in the kitchen.

Choose a protein- hamburgers, veggie burgers, veggie chicken, chicken breasts, salmon, bean patties, whatever you can find.  I found a package of Ahi tuna in the freezer.

Make a sauce for the protein- Find jelly in the fridge or pantry.  Apricot, chokecherry, jalapeno, apple, blueberry, peach….Now combine it with bbq sauce or soy sauce.  The jelly should be the highest ratio.  Add a dried spice like chipotle, red chile, garlic, dill, basil…be creative.  Add a little broth or white wine to thin to desired consistency or use a jar of jelly that didn’t set!  Done.  Top cooked protein.

Meanwhile choose a frozen or fresh vegetable- artichokes, green beans, carrots, cabbage, anything tastes great with this method.  In the boiling water add a few cloves of garlic, a sprinkling of chipotle, 2 tablespoons of lemon extract (lemons soaked in vodka for two months) or fresh lemons, and sea salt.  The water infuses the vegetables lightly.  A bit of butter and salt is all it takes to transform the vegetables.

IMG_2146Make a pilaf.  I used buckwheat which cooks in 20 minutes.  Rice works too.  Cook in rich broth with raisins and salt until ready, add walnuts and walnut oil or any nut or fruit.

In twenty minutes or so you have a gourmet, delicious, nutritious meal on the table while saving money because it uses what is already there.  Now you have time to start Christmas cards after supper!

Creamy Coconut Curry (in a Crockpot!)

This is a Maryjane Rose approved recipe.  She had thirds!

At the beginning of the year I mentioned that we would try new types of food.  Ethnic food includes many spices that support the circulatory system and boost immunity.  There are many vegetarian recipes as well.

There are many different curry blends out there.  The one I bought had the ingredients we liked the most higher on the list.  We are new to Indian food.  Doug and I were pretty certain we didn’t like it.  We are trying to open our horizons!  We were truly American in our culinary ventures growing up.  Mexican food was tacos.  Italian food was spaghetti.  Chinese food was American Chinese food.  Indian food was not on either of our plates growing up.  So, here is my attempt at a delicious, warming Coconut Curry, not too hot, just spiced well.

Creamy Coconut Curry

In a crockpot combine:

1 cup of dried garbanzo beans

1 cup of frozen peas

1/2 acorn squash, peeled and diced

1 medium potato, diced

3 1/2 cups of water

Cook on low for 8 hours.

Add one can of unsweetened coconut milk

3 Tb of Simply Organic Curry Powder

1 1/2 teaspoons of salt (add more to taste after letting settle in)

Cook on low for a 1/2 hour while making rice or couscous to serve over.

Drink Pairing: We had hot vanilla tea for lunch but if you were so inclined a Sauvignon Blanc would be excellent.
